Why does the purity of olive oil need to be measured?

Olive oil consists of high content of monounsaturated fats. Studies show that consuming a moderate amount of these fats can lower the chances of heart disease. This application note measures the quality of olive oil and helps to differentiate between extra virgin, virgin, and regular olive oil, based on the guidelines from the International Olive Council (IOC). Hence ensuring the purity of olive oils is crucial.

How is the purity of olive oil measured spectrophotometrically?

The quality of olive oil can be assessed by measuring it's absorbance with an UV/Vis spectrophotometer in the range of 200 nm to 300 nm, as the absorption in this wavelength range indicates the presence of conjugated dienes and trienes. A lower level of absorbance in this region typically indicates high-quality extra virgin olive oil, while lower quality oils tend to exhibit higher absorbance levels in the same area.
