Spectrophotometric Method for the Precise Determination of Calcium Content in Beer

This application note provides a method for the determination of calcium in beer using METTLER TOLEDO's EasyPlus UV/VIS spectrophotometer.
 

Why Is Calcium Determination in Beer Important? 

Beer is the most popular alcoholic drink. Water is the major ingredient, and its composition can affect beer's quality, taste, color, and durability. Calcium, present in water, determines the water's hardness. Calcium can overcome the buffering capacity of malt phosphates, lower the mash pH to an acceptable range and promote clarity, flavor, and stability in the finished beer. Hence, its determination is essential.

 

How Is Calcium Content in Beer Determined?

This application note focuses on the calcium content determination in different beer samples using a METTLER TOLEDO EasyPlus UV/VIS spectrophotometer and a Spectroquant® Merck Calcium Test Kit (Merck 1.00049). The intensity of the violet dye complex of calcium is measured at 565 nm, which is directly proportional to the calcium content present in beer.
