How is the rate of a kinetics reaction determined spectrophotometrically?

Enzymes are molecules that increase the rate of a reaction, but are not used up in the reaction. The Biofuel Enzyme kit verifies the ability of an enzyme to increase the conversion rate of a clear substrate to a colored product. In this application cellobiase is used as an enzyme to increase the degradation rate of the sugar compound called p-nitrophenyl glucopyranoside to glucose and p-nitrophenol which is a yellow substance.

To study the initial rate of product formation, the enzyme cellobiase is added to the substrate solution. The enzyme's activity is indirectly measured by monitoring the change in color intensity, which is done using the UV7 Excellence spectrophotometer.
