How is sugar solution color measured spectrophotometrically?
Assessing the color of sugar solution is one of the most important quality markers for sugar producers and refiners. This method is applicable for plantation white sugars, raw sugars and very low-color sugars. It is designed for all sugars in the solution color value up to 16000 ICUMSATM Units at pH 7.0 (IU7.0).
The absorbance value of sugars are pH dependent. The absorbance increases when the pH value is increased and vice versa. Therefore, prior to the color determination, the pH is measured and adjusted to neutral using MOPS Buffer.
MOPS (3-(N-morpholino)propanesulfonic acid) is an excellent buffer for many systems at near-neutral pH.
